Lime-Pineapple Salad

Ingredients

1 lg. can ( or 2 sm) pineapple tidbits

1 sm. can crushed pineapple

1 lg. pkg lime jello

1 sm. pkg lime jello

1 can evaporated milk

1 lb cottage cheese

1/2-3/4 c. chopped nuts

Directions

Drain and reserve pineapple juice and add water to make 2 1/2 c. liquid, bring to boil and dissolve jello.
In lg bowl add jello, milk, pineapple, cottage cheese, nuts, and stir.
Pour into lg 10x15 casserole dish and refrigerate until firm, preferably overnight.

Notes

This has always been a staple dish every Christmas at the Tate's except we now have one member of the family who does not like cottage cheese and another member who does not like nuts so we make 2 sm dishes extra each one leaving out the ingredient they don't like. I think that works great so we can keep up the tradition!
